Wow! So creamy and sweet and full of healthy fats. My kids love it! And so quick to make, no baking!!!!
This recipe will make 8 generous helpings…
Ingredients
Crusty Base
- 150 grams almond meal
- 50 grams ground LSA
- 4 teaspoons cocoa powder
- 5 teaspoons Erythritol granules (natural sweetner)
- No added sugar. Half a teaspoon of raw honey! Not sure if you need it, but I chucked it in because sometimes stevia can give a slight bitter aftertaste.
- A pinch of salt
- 5 tablespoons of melted full fat natural butter.
Chocolate moose
- 160 ml full fat coconut cream
- 50 ml coconut oil
- 60 grams cream cheese (I used Philadelphia cheese)
- 5 tablespoons of Erythritol granules (natural sweetener)
- 10-20 grams of cocoa powder or raw cacao
- 1 small avocado
- 1 teaspoon of vanilla extract
- Half a teaspoon of raw honey
- A pinch of salt
Instructions
Pie Base
- Toast the almond meal/flour in a fry pan (no oil) for a couple of minutes on medium heat. This will make the crust yumbo!
- Melt butter in pan.
- Mix the almond meal/flour and ground LSA in bowl. Add in the cocoa, Erythritol granules .(natural sweetener) and salt and mix with a spoon. Poor in half the melted butter and mix. Add more melted butter until you have a viscous consistency. Not too runny.
- Put some baking paper in a pie dish and press in the mixture with your fingers. Put into fridge and make the chocolate moose.
Chocolate Moose
- Put all of the ingredients into a food processor and blend until you get a creamy mixture.
- Taste and adjust with more sweetener, some honey or salt depending on requirements.
- Poor the moose over the base.
- Add blueberries (frozen is fine).
- Add shredded coconut and or whipped full cream depending on your fancy!
- Put into Fridge for 15 minutes until set. Eat!
